I left off a few weeks ago about #littlemeg_best2019 pie / pithivier series in Paris. Here was another I had in Feb 2019, Pie with Foie Gras, Eel, and Ris de veau (veal sweetbread), black truffle on top and underneath the two layers of eel, and cabbage around the filling under the crust, surrounded by veal jus (pic 1-5), at @neigedete_paris15

This was actually the first time they made this pie, which could be cut into a few pieces as it was a longer log (pic2-3) . There was no lack of luscious ingredients inside, so everything was very moist and tender, nothing dried off. In particular the eel was also fluffy and soft like Katon style steamed unagi!

This crust was more of a “real” pie crust, flakey and buttery not a “mille feuille” crispy texture. I think that was the highlight!

The sauce was very savory so it went well when you eat everything together.

Pic 6-8 My favorite pithivier of all time from @neigedete_paris15 in the past three years, foie gras, mallard duck and white partridge. One of the best things I have ever eaten in my life 😌
