Sushi Takamori – Kanazawa

I recently had lunch at Sushi Takamori, a relatively new eight-seat counter about ten minutes from Kanazawa Station. The restaurant opened in 2024 and is run by chef Yuhei Takamori, who trained at the legendary Taihei Sushi, one of the historic pillars of Kanazawa sushi culture. I had the chance to eat there once when the old master was still alive, so it was interesting to see that lineage continue here in a younger and fresher setting.

The ingredients are exactly what one hopes for in Kanazawa—excellent seafood from the Sea of Japan, sourced locally and handled with confidence. The neta are cut on the larger side, giving the sushi a generous and satisfying presence. The shari has a pleasant acidity, noticeable but balanced, providing structure without overpowering the fish.

Several pieces stood out, particularly those pictured with captions. The matured fish section was especially strong, with the chutoro being the highlight of the meal.

Overall, Sushi Takamori feels new and energetic while remaining grounded in the traditional Kanazawa school. A very promising counter and certainly one to watch as it matures. Less
