All the Thai flavour profiles you expect harmonised across the menu . The backbone of which was coconut ,
presented in many forms and textures, and even used in the form of cooking vessel when made into coconut charcoal .
The meal starts with a number of excellent street food inspired snacks , and cutlery is essentially not required for the first half of your meal .
It dawned on me that I think I have had zero Thai food over the last 12 months , so the first bite of Miang - a charred cabbage roll filled with prawns , sour relish and a litany of herbs and acids was a reawakening . This was a summer roll on steroids .
Fermented rice custard with grilled lobster tail and coriander flowers - the texture of the custard is the crux of the dish , luxurious simplicity .
Poached Gillardeau Oyster was
Served with passion fruit nam jim and fried shallots - perhaps a little timid and this was the only dish where I craved more punch .
A Curry Puff hybrid which evoked memories of both pani puri or party pies depending on your upbringing . Filled with Grilled beef in a southern style curry and a nest of chives.
Sour Tomato Broth- used crab shells infused with tamarind and lime . Refreshingly sour .
Sticky Rice Roti was half pikelet , half taco and completely delicious . Topped with
Coconut-smoked short ribs, kaffir lime relish .
This was the dish of the night .
Grilled King Crab Shoulder ended the street snack portion of the meal , the meat beautifully sweet and paired with Fermented green chili nam jim and coriander stems
Alaskan king crab curry brought the heat ! A beautiful rich southern Thai curry with steamed rice cake and pickled spring onion .
Salad of young coconut meat, green mango and coriander flowers was a lovely palate reset , fresh and funky .
Southern style spicy lamb curry with spiced rice and morning glory topped with cured egg yolk . Generous and punchy main course
White Rose granita with wild ginger and longan is a lovely pre dessert and the meal is truly brought home with a cracking dessert -

Back again. Man, I love Thai food - and this is easily one of the most impressive Thai restaurants I’ve been to. The creativity across the menu and the way flavours are layered and balanced is genuinely next level. Every course feels like it shouldn’t be able to top the last, and somehow, it always does. A well deserved star for the team here .
Their short rib taco is one of my favourite bites of all time, and I’m so glad it’s stayed on the menu. Perfectly tender, ultra-juicy, beautifully charred short rib, served on a sticky rice roti “taco” with kaffir lime relish and fermented sticky rice. A two-bite explosion of flavour - rich, spicy, smoky and fatty, yet perfectly balanced.
The grilled king crab shoulder with green chilli nam jim and coriander stem was another standout. An underutilised ingredient that’s incredibly buttery and sweet, handled with restraint and just the right hit of heat. I loved how gently this was flavoured. The lobster khanom krok is a wild dish that’s hard to describe - think a crisp-cased dumpling filled with warm, fermented rice custard, topped with smoked lobster tail. Completely unique. Beautiful to look at and even better to eat.
So many layers to every dish here, with nothing out of balance. This is the kind of fine dining I love - creative, flavour-led cooking that’s bold, punchy and never predictable. An all-time favourite. Food, service and vibe all in check Less

I dined at Manao 24 hours before they won their first Michelin star. I’m not saying that had anything to do with it, but I’m not saying it didn’t either.
Manao is the love child of Chefs Abhiraj Khatwani and Mohammed Orfali – an unlikely duo, tackling an even more unlikely cuisine.
This is an Indian chef, partnering with a Syrian chef, to deliver Michelin standard Thai cusine. Only in Dubai.
Truth be told, Abhiraj has been cooking Thai since his Yellow Monkey days, and he’s grown since then. His cooking is much more refined, considered.
The dishes always had confidence and great flavour, but in Manao, with Orfali’s input, there is more refinement and sophistication.
For the few that aren’t familiar with Manao, they serve a Thai inspired set menu of 11 courses.
The Serb and I arrived for a midweek date and the first bite, took the Serb’s breath away. Quite literally.
I’d forgotten her ‘delicate’ Balkan palate, so the sour relish on the charred cabbage miang took her by surprise.
She recovered - in time for the dessert.
We opted for the drinks pairing as well – best decision of the night. House drinks like jackfruit Kvass and roasted barley and coffee tepache elevated the menu.
But my favourite was the banana kombucha. Even though staff had warned it was an off-menu experiment, the Serb kept looking at the menu trying to find it.
As politely as possible, I reminded her it wasn’t there. For the third time. She fixed me with a Slavic stare and gently said, “I don’t like your attitude.”
My Kombucha froze almost instantly.
The rest of the dishes went by in a delicious blur of flavours, textures and stories.
Shout out to the coconut short rib for the amazing textures, the sour curry for its…sourness and the thai banoffee bite for everything else.
It is an exceptionally good menu. Quantity, pacing, flavours - they were all on point.
Special shout out to the poor server who patiently listened to my story of why Thai cuisine punches above its weight on the world stage; his encourgaing nods were perfectly timed.

I can read about all that, and more, on the website. I just want to eat my food. In peace. And preferably warm. Unless we’re feasting on sushi and sashimi. But even then, the tale must be kept to a minimum. There’s only so much inane chatter I can stomach.
Good food should speak for itself.
And then along comes @manao_dubai An affordable, by Dubai standards, of AED450 for an 11-course tasting menu. Served in one and a half hours. A printed menu on the table, from arrival. Something several of these concepts don’t give you until, dare I say, the bitter end. A succession of different staff members explained the dishes, succinctly in seconds. The chef only popped out once to briefly present a dish, swiftly scuttering back to the open-plan kitchen. You wouldn’t even know he was the chef, unless you had stalked his good looks on Instagram.
Chef @abhiraj_khatwani is the [handsome] Indian chef whose cooking expertise was honed in north-east Thailand before opening The Yellow Monkey, a casual Thai gem at JBR that I used to frequent years ago until Covid shut its doors. @m.orfali of @orfalibros_bistro fame, the Midas touch chef has backed him to open a 34-seat restaurant in Wasl Vita, solely dedicated to a Thai-inspired tasting menu.
