Another visit to @elianerestaurant in Brussels. I’ve been a fanboy of @kobedesramaults for over a decade now since my visits to In De Wulf and then the incredible Chambre Separee in Ghent. I was in love with the intensity of the counter at Chambre Separee so was sorry when it closed (as was always the plan). So when Kobe finally opened his latest project Eliane I was of course one of the first through the door.
Here Kobe is cooking a Carte Blanche menu that is spontaneous and ever changing depending on what products are at their peak. Served in a room that, with his vinyl collection playing an ever changing soundtrack to the meal as chosen by whoever is free to select a record, feels like you are dining in his living room. After this second visit I can’t wait to return for a third. Highly recommended

Fortunate enough to have visited In De Wulf early Summer of 2016 I regrettably missed Chambre Séparée, so when Kobe Desramaults announced Eliane a return to Brussels was planned immediately.
Just 22 seats, including half at a bar, guests at Eliane get to watch Desramaults and staff work largely with flames and standard kirchen equipment as 26 creations come together from local, seasonal ingredients.
Named after Chef's grandmother the project is clearly a personal one, including the sizable... More

As with In de Wulf plates are intentionally simple and ingredient focused but boldly flavored and creative, while service is warm and generous.
