Last year, “Yama” stunned the culinary world by becoming the first restaurant in Japan specialising in “Assiette Dessert” to earn a @michelinguide star🌟

The course here updates every two months, and the July–August theme, carefully curated by @kouman1, was “Peach & Seasonal Summer Ingredients”🌻

The star of the show, peaches, appeared in three standout creations: “Peach Micuit”, “Peach Beignet”, and “Peach & Jasmine”👑 A personal highlight was the finale, inspired by the chef’s recent trip to Hong Kong (with us!)🇭🇰

Underneath a layer of peaches featured almond-scented blancmange, Miyazaki lychee, and jasmine flower jelly - a delicate, unforgettable ending to a flawless journey of summer flavours💐

日本で初めてアシェットデセール（デザートコース）でミシュラン1つ星を獲得し、歴史的快挙を成し遂げたお菓子なお店「Yama」⭐️

他では味わえない異次元のデザートの数々を作り出すシェフのクリエイティブなラインアップは常に進化し続けていて、毎回感動してしまいます🥲 今回は7月・8月の「桃と夏の食材」を贅沢に使ったコースに伺いました🎐

素晴らしいラインナップの中でも特に印象的だったのは、シェフが香港で得たインスピレーションを表現したフィナーレ「桃と白い花」🐲

桃のレイヤーの下には、アーモンド香るブランマンジェ、宮崎県産ライチ、そして繊細なジャスミンの花のジュレ✨ 夏の余韻を残す、完璧なフィナーレでした💯
