This year, I was fortunate enough to finally visit Sushi Saitou, a long-held dream of mine.I am truly grateful for this opportunity. On this day, I had lunch in Karuizawa, but I hurried back to Tokyo, determined to make it in time, arriving just five minutes before the start. The moment I got out of the taxi, I sighed in relief, knowing I had made it.I believe this restaurant is worth every effort.Every time I visit, I am amazed by how consistently they maintain such an outstanding quality. Despite trends and changes over time, their commitment to welcoming guests at such a high standard is truly admirable. This time, what particularly stood out to me was the sea urchin. As a sea urchin lover, I have tasted many, but the one I had that day was exceptional. The sweetness and lingering flavor as soon as it touched my palate were remarkable, making me feel grateful to be alive to experience such a delightful taste.I am thankful to have had the chance to sit at the table again this year.I look forward to the day when I can have this opportunity again."A windfall" only comes to those who make the effort to reach the shelf. This was a night that reminded me of that.
