「Chakaiseki Onjaku (茶懐石 温石)」is a tranquil kaiseki restaurant tucked away in Yaizu, Shizuoka, where Chef Daigo Sugiyama (杉山互乃) creates refined seasonal dishes that pay homage to the region's abundant seafood traditions. Rooted in his hometown and inspired by the bounty of the surrounding sea, Chef Sugiyama curates a menu that shifts with the seasons, ensuring every visit brings a new and memorable dining experience.

The restaurant’s setting embodies the spirit of traditional Japanese design, beginning with a serene garden that guests pass through before entering the main dining area. Inside, the open counter and meticulously crafted wooden accents invite diners to appreciate the artistry behind each dish, as it’s prepared right before their eyes.

As one of the earliest supporters of「Sasue Maeda Fish Store (サスエ前田魚店)」, 「Chakaiseki Onjaku」enjoys privileged access to some of the rarest ingredients—even among its peer restaurants. During my visit, we were incredibly fortunate to taste the whole hearts of bonito, a delicacy seldom seen. The restaurant also receives the finest kinmedai daily, which is expertly prepared in the chef’s signature style: grilled with the scales intact to achieve a beautifully crisp texture.

Onjaku’s unwavering dedication to local sourcing and time-honored techniques has earned it a place among the most respected establishments in Shizuoka.
