In June, I coincidentally had the chance to experience「Sushi Saito」not once, but twice in a single evening — a first, as far as anyone knows. It was an unexpected and slightly surreal experience, but I relished the opportunity to spend the whole evening with Saito-san, immersing myself in his masterful sushi and absorbing the intimate atmosphere of the restaurant. Saito-san even went out of his way to create a few special dishes just for me during the 2nd round. The evening was a whirlwind, yet unforgettable, offering a rare glimpse into the dedication and artistry that make Saito-san’s creations so special.
