One of the most memorable meals from my trips to Japan was a collaboration dinner starring Chef Daniel Calvert of the French restaurant「SÉZANNE (セザン)」in Tokyo and Chef Danny Yip of the Cantonese restaurant「The Chairman (大班樓)」in Hong Kong. This exceptional “four-hands” dinner exemplified what true collaboration should be: a seamless fusion of the two chefs’ culinary styles. The meal featured an array of dishes that masterfully blended French, Japanese, and Cantonese cuisines, making it a once-in-a-lifetime experience.
