I felt profoundly fortunate to finally experience「Kataori (片折)」during the coveted matsutake season, widely regarded as one of the most exceptional times to visit this renowned Kaiseki restaurant in Kanazawa. Chef Kataori sources matsutake mushrooms from the Noto region, ensuring unparalleled freshness. Each mushroom is foraged on the same morning and promptly delivered to the restaurant right after inspection, necessitating a later dinner service compared to other seasons. It is truly extraordinary to journey to Hokuriku and savor these exquisite local matsutake.
