This is one of the most eye-catching courses on the current menu. Think of it as vegetarian bone marrow served in a vessel of locally sourced bamboo. The egg custard bears the color of clay, but don’t let the unusual hue turn you off. The taste is wonderful with a remarkable satiny texture. Piled on top is earthy wild mushrooms, young ginger, candied hazelnuts, kumquat, shiso, and bergamot flowers. This dish was a favorite of the evening 🤤👏😋
