Table - Paris (France)
Choosing one fine dining restaurant among the infinitude of alternatives when organizing a 10 day stay in the city was not an easy task. Luckily, I could not have been more right in picking the (at the time) one Michelin starred Table, by the culinary genius @bruno_verjus.
Table has a very laid back atmosphere for such a high-end establishment. From my stoll at the waved counter, I had a privileged view of the action taking place in the open kitchen, where the team led by Bruno himself prepared one unforgettable bite after another.
The restaurant uses premium ingredients that are carefully sourced and somehow elevated without losing their original qualities, before being plated in an elegant way. Although the focus is on shellfish and seafood in general, the absurd quality of the vegetables used also deserve an honorable mention.
For those who are wondering, their signature tartlet for dessert did not disappoint. It is made with South-American dark chocolate, with a gentle touch of capers and topped with a spoonful of Oscietra caviar. The smart combination of ingredients fit perfectly alongside each other, leaving diners with another “wow” moment at the very end of their meal.
