Sala de Despiece - Madrid (Spain)
@saladedespiece is a bit tricky to describe. I think the best classification for it is a modern tapas bar. The vibe is young and lively, with communal tables in an ambiance that reminds you of a mix between a food market and a butcher shop.
The experimental food served here, with many dishes being finished tableside, puts ingredients at the center stage.
The deep fried artichoke with caviar and avocado cream combines sweet and brinny notes into one memorable bite. Other standouts were the pancetta filled with a cured egg yolk and foie and the chuleton, thin slices of beef rolled with a tomato and a truffled paste.
But besides the food in itself, the whole concept behind it is what truly makes a meal at Sala de Despiece so special. The interactive dining, with clients engaged in the presentation of many courses, the sharable aspect of most items and the high level of creativity surrounding it all made me rejoice and truly appreciate my time inside those industrial-like walls.
