Yuston’s is back at @trexhouston for a limited-time pop-up (April 2–6), paying homage to Chef Justin Yu’s favorite restaurant, @houstonsrestaurants, with all the classics reimagined with his touch.

Last night was spent enjoying:
Spinach Artichoke Dip
House Smoked King Salmon
Prome Franch Dip Au Jus with Baked Potato
Wagyu Flat Iron Steak with Broccoli

Hot Fudge Sundae

Every dish hit the mark. The French Dip with soft, pillowy bread, Wagyu seared just right, and smoked salmon brightened by yuzu tartar, all thoughtfully balanced. Both the dip and dessert were memorable highlights. From first bite to last, the meal was playful, nostalgic, and flawlessly executed.

Although James Beard Award winner Justin Yu shuttered Oxheart in 2017 his cooking remains innovative and exciting in its current form at Theodore Rex. Located just off the highway in a converted building with minimal adornment Yu's food is aggressive yet accessible and exotic despite its roots in local produce. Small, with a smart staff, the Tomato Toast is famous for a reason but both pastas were amongst the best I've had stateside in a while.
