にしんそば / Nishin Soba / Men Sakaba Hakoya — Kiyamachi, Kyoto
Dashi soup is made from katsuobushi only, combined with soy sauce and katsuo oil. Thin straight noodles are special ordered. Topped with stewed nishin (herring), tororo kombu (shredded kelp) and diced negi. Nishin Soba is a limited menu item, the main menu features ramen served with charcoal-grilled beef.
Men Sakaba Hakoya is a ramen shop and drinking bar, open until 2:30am most nights. Part of the same group that operates the yakiniku restaurant Nikuzara Sakaba Hakoya and the izakaya Pontocho Toriton, both located nearby. Six seats. Open since May 18th, 2023 @mensakaba
