Recommended bowl: Sapporo experience

Sapporo style miso ramen, opened by a master with enough pedigree to create a buzz. Motoyama-san trained at the Sapporo shop Sumire for over 10 years before opening this shop in February 2020. The tonkotsu based soup is made from pork bones, gyokai and vegetables. Blended in a wok with hot lard, creamy miso, and topped with grated ginger.
