Before going to Sanshin I had never seen a chef mix Akami & Toro in the same nigiri. After witnessing the creativity of chef @trinity_spirit it picked my interest and I decided to pay more attention to other sushi styles and not only focus on edomae. A very important stop in my sushi journey.
