Mr. Kishida, the owner-chef, offers only an Omakase course to customers, making use of the three mantras he learnt during his training: respecting the ingredients, pursuing a fiery style, and taking extreme care over seasoning. This season highlights Kaga lotus root, crumbled and fried prawns and French mussels, and a rich soup with mushrooms harvested from Nagano. You also can't miss the alcohol pairings!
