The namesake is a Hans Christian Andersen fairy tale. The soup was a broth made from the bones of an Ibérico ham (served in Course 20, “Airy Bread”). The brioche was inoculated with two types of penicillin mold and accompanied by a spread of spiced pork fat 🐖
