「サーパス」の料理に使われる魚介は豊洲市場から仕入れ、鹿肉や野菜などは、ハンターや生産者の元を訪ね、それぞれの考え方、こだわりを理解した上仕入れていると言うこだわり方。その食材を使い最近では、鰻、焼きナス、フォアグラ、生ハムの春巻き、ペティアン、スイカ、牡蠣、ジュンサイ、黒トリュフのカルパッチョ、熊本天草車海老を使用したグリーンカレーなどが味わえる。コースと合わせてソムリエがオススメしてくれるアルコールペアリングも最高との事。

Cirpas sources seafood from the Toyosu market, while venison and vegetables are purchased from select suppliers. Recently, the restaurant introduced new dishes such as eel, grilled aubergine, foie gras, and prosciutto spring rolls; petillant, watermelon, oysters, Junsai, and black truffle carpaccio; and green curry using Kumamoto Amakusa’s Kurumaebi. The sommelier also recommends alcohol pairings that go best with the courses.
