Serving caviar "au naturel" with the classic condiments like red onion and blinis will often make it hard for the caviar to shine. This serving of oscietra caviar with a mix of smoked fresh cheese, creme fraiche, fried bread and gently pickled pearl onions was elegant yet flavourful and first of all very delicious.
