Nearly six years after my last visit, I returned to Kadeau in Copenhagen β now newly awarded its third Michelin star β for a menu devoted to the restaurantβs Growing Season.
The cooking remains unmistakably its own: deeply rooted in Bornholm, quietly original and remarkably attentive to texture and temperature. Highlights included smoked squid with Annabelle potato, kombu and magnolia; barely chilled tomatoes with herbs and nasturtium; raw scallop with sweet onion, hazelnut and quince; and an extraordinary four-part study of langoustine with plum, saffron and flowers. Even the simplest compositions revealed an astonishing degree of thought and precision.
Not every course was equally convincing, and the price has become impossible to ignore. Yet this was still an overwhelmingly superb meal β full of originality, surprise and understated beauty β and one that already makes me want to return for Preservation Season.
