Honma-san's sushi is as straightforward as it gets. Decent vinegar strength (6.5/10) with a tilt towards komezu. In winter, kue was the opening piece, in spring a super crunchy piece of ara. Both times followed by sawara with the thinnest layer of wara smoke. Very classic.
