When @hosekisugiyama821 opened in Dubai 9 years ago , the dining public was completely naive to traditional sushi having been well and truly accustomed to the likes of Nobu and Zuma . Even now the process of education continues, and as a result the menu here plays a fairly straight bat , avoiding the likes of silver skin fish which are seen as to challenging to many diners . The otsumami and neta are served simply with light garnish , some citrus is deftly deployed and the tare is light but has satisfying Unami . The Shari is warm, slightly loose and very balanced . Ambiance is friendly and fun and the decor at the very sleek Bvlgari resort is first class
