The bowl is pretty balanced in its ratio of soy sauce to tonkotsu soup. I’d like to see a bit more spinach, but was impressed at how freshly cooked it was (which you can tell in the photo.) For this ramen style, I always recommend ordering extra nori. I just love the way dried seaweed soaks up that fatty, soupy goodness.
