The globally renowned “𝗗𝗘𝗡” has repeatedly been featured on @theworlds50best restaurants and awarded two @michelinguide stars🌟

It can be difficult to secure a reservation given their international acclaim, but it’s worth trying - be sure to call between 12PM and 5PM, two months before your intended visit📞

This season’s lineup may be our all-time favourite yet - featuring late summer and early autumn ingredients like edamame, corn, and “sanma” (Pacific saury)🌻

The pinnacle was the 𝗦𝗮𝗻𝗺𝗮 𝗖𝗹𝗮𝘆𝗽𝗼𝘁 𝗥𝗶𝗰𝗲, a rare variation making a comeback for the first time in four years (sanma is limited due to smaller catches recently)🎣

It was served with a sauce made from the fish’s liver blended miso, bringing out the natural umami in every bite🍚
