ディナーは10皿前後のおまかせコースのみ。食材選びを研ぎ澄ますことで、よりストレートにその旨みを活かした「毛蟹のパエリア」、スペインで親しまれるコロッケとイカの墨煮を融合した「イカのクロケッタ」など美しい皿が楽しめる。他にも丁寧な火入れが光る「国産牛の炭火焼」食材の旨みをシンプルに生かす「パエリア」などもおすすめとの事。
