Back in January I finally made it to @restaurantzen.sgp Zén in Singapore, Björn Frantzén’s three-Michelin-starred sister restaurant to Frantzén in Stockholm.
It’s one of those restaurants where the experience starts to feel different almost immediately. Set inside a beautiful old shophouse on Bukit Pasoh Road, dinner unfolds across three floors — beginning with snacks and opening courses downstairs, moving upstairs for the main part of the menu, and eventually finishing in the living room with desserts and petit fours.
The cooking follows the Frantzén DNA but very much has its own identity: Nordic at its core, with French technique and a strong Japanese influence running through the menu. Beautiful produce, big flavours, plenty of luxury, but without everything feeling overly serious.
What I particularly enjoyed was how relaxed the whole thing felt. For a restaurant operating at this level, there’s a warmth and informality to the service and surroundings that makes the evening feel less like a conventional fine-dining experience and more like being very well looked after in somebody’s rather spectacular home.
A seriously good meal and comfortably one of the highlights of that Singapore trip.
