In Axpe, Atxondo, yes, the same tiny village as Asador Etxebarri where he worked as sous-chef with Bittor Arginzoniz for long years, will emerge into the highest league, Etxebarri, Txispa (Tetsurou’s new place), and Mendi Gookoa Bekoa’s restaurant, it will be a serious destination for serious foodies!
