Mark my words: Tetsurou Maeda will create something totally new and wonderful in the Basque country next year.
In Axpe, Atxondo, yes, the same tiny village as Asador Etxebarri where he worked as sous-chef with Bittor Arginzoniz for long years, will emerge into the highest league, Etxebarri, Txispa (Tetsurou’s new place), and Mendi Gookoa Bekoa’s restaurant, it will be a serious destination for serious foodies!
