セアブラノ神 (Seabura Kami in Kyoto)

Seabura backfat is used commonly in ramen. Thick globs of silky fat that basically melt in the bowl. Although the image looks chunky, it is smooth as butter. Probably more calories than butter as well.

I'm currently breaking down the Top 100 #hyakumeiten #百名店 shops from around Japan. This one is 17/100 on the West Japan list.

Recommended bowl: Pork back fat god

Seabura No Kami means "the god of back fat." Needless to say, the bowls here come laden in pork back fat. The mixture of backfat and niboshi shoyu soup suggests that this shop might have been inspired by Niigata Tsubame-Sanjo-style ramen, but these dishes are a little more refined and put together with a personal touch. Toppings: diced onions, negi, thin-sliced pink chashu. A few different variations available—all worth trying.
