Buta Boshi aka 'Pig Star' is run by founder Takayuki Ootsuka, who has been working in ramen shops since he was 19 years old. Before opening here he put in time at Jiro outposts in Koganei and Hachioji, among other ramen shops. Thick, home-style noodles topped with slabs of pork chashu and a mountain of vegetables, all of it swamped in a rich, salty, tonkotsu shoyu soup.
