Sushiyoshi was a 2 Michelin star restaurant in Osaka , before shutting shop and pivoting towards conquering international waters , it now has branches in Hong Kong , Taiwan , Shenzhen and will have a Macau branch later this year .
The nigiri portion was solid and pleasing if not memorable but the otsumami dishes were a lot of fun .
Ankimo was draped with mochi for a sweet and mineral combination.
Kegani was served in wasabi leaf in the style of a Vietnamese summer roll and the crab roe was turned into an outstanding madeleine.
The signature dish is Botan ebi shrimp served both as carpaccio and ice cream , the sweetness of the shrimp is certainly at the forefront .
For the nigiri , particularly enjoyed the icy temperature of the uni which gave it a parfait quality and also the cured textured of the Kuruma ebi which had been seasoned with mullet roe .
