Maybe I am having a super taster day or perhaps the winter seafood is hitting on another level , whatever the reason at today’s lunch at Sushi Saito HK all the flavours seemed amplified!
Highlights were an incredible fudgy Ankimo , absurdly juicy Chutoro which had the texture of the Otoro , the Otoro itself was completely melting and had super clean flavour on the palate .
Hirame was cut reasonably thick and had great texture .
Ika and uni was a fun nigiri combo , with firm texture and silky mouthfeel interwoven .
A duo of Bafun Uni was a roller coaster , starting sweet , then super mineral driven before the tare gave a rich finish .
The weekend lunch here is served at much slower pace than the business driven midweek affair , certainly recommend visiting while the winter Neta is on song !
