This is my third visit today, and I feel a pleasant sense of tension that makes me sit up straight.One dish that left a strong impression was the perfectly cooked Spanish mackerel. It had a refined flavor, and the tender flesh paired wonderfully with fermented shallots. It was truly delicious. Also, the final dish of rice with sardines and young ginger was fantastic. I was already full, but I couldn't resist having a second helping. It was so good!
