Sobrasada is a traditional dish from Mallorca, Spain. The standard version is made with pork, but here it is prepared with finely minced horse meat and wrapped in perilla leaves. It was delicious even when paired with baguette. It seems there are various ways to enjoy it in Spain.I'm looking forward to the upcoming summer season when my favorite sanma (Pacific saury) paella will be served!
