The wooden facade, noren (traditional curtain), and soft lighting create a vibe that feels refined without being flashy.Inside, the layout centers around the counter, allowing diners to be close to the grill, where the aroma of charcoal and the sound of fat sizzling fill the air. The ambiance strikes a perfect balance—not too quiet, yet not overly noisy—making it an ideal spot for adults to enjoy a leisurely drink.What surprised me first was the grilling technique. The chicken thigh is perfectly charred on the outside while remaining astonishingly juicy on the inside. With the first bite, the smoky flavor of the charcoal is followed by a burst of chicken fat.The seasoning is just right—not too salty, allowing the sweetness of the fat to shine through. The tsukune (chicken meatballs) were particularly to my liking. They have a nice sear on the outside while being fluffy and tender inside. The fine texture of the cartilage adds a delightful crunch.Unlike some places that mask the flavor with a heavy egg yolk, these tsukune showcase the natural umami of the meat. The liver was also excellent, with a glossy exterior and a creamy center.
