I visited for lunch for the first time. Sushi Namba is renowned for its Edo-style sushi, where the temperature of the rice is meticulously adjusted for each type of fish, showcasing their commitment to quality. The a la carte dishes are also of exceptionally high quality, and I was particularly impressed by the whale meat, which melted in my mouth and was a flood of concentrated umami flavors.The head chef has a strict demeanor due to his dedication to sushi, but we had a great conversation about delicious restaurants.I also appreciate the rare Shinsei Earth sake that was opened for us. It was a great meal!
