Kanazawa @ "Kataori"A memorable dining experience at the end of summer. This time, I visited the Japanese restaurant "Kataori" in Kanazawa. The theme for August was "Obon."Rather than just enjoying the food, it felt like I was savoring the seasons and culture of the region, one dish at a time.We started with refreshing tokoroten, followed by a soup with scallops and sweet sea bream with okra.Next was grilled blackthroat seaperch marinated in shuto. Then came rice steamed in a lotus leaf, sweetfish prepared with white miso, and simmered soft-shelled turtle jelly, featuring ingredients from Noto...Each dish encapsulated "summer,"and each dish represented "Obon."The food itself was, of course, exceptional, but also the tableware, presentation, selection of ingredients, and the timing of serving were all harmoniously connected. By the end of the meal, it felt less like I had just eaten, and more like I had experienced a season.Kanazawa has many delicious offerings, but "Kataori" stands out among them. It’s not just about eating seasonal ingredients; it allows you to feel the land, the season, and the culture from which those ingredients come. It was a wonderful experience. It was a great meal.
