“CYCLE” opened in Otemachi in October last year, and is the latest project of @maurocolagreco (who is most renowned for @restaurantmirazur in Menton, France, which won 3 @michelinguide stars and ranked Number 1 on @theworlds50best restaurant list in 2019)🌟 The French restaurant features elements of “roots, leaves, flowers, and fruits” to represent the cycle of life and sustainability♻️

I had the pleasure of attending the special 3-day event last weekend, where Chef Mauro himself, along with Head Chef @miya176336, attended guests to celebrate the arrival of spring🌷 The “Inspiration” Course featured variations of citrus, inspired by the Lemon Festival in Menton - personal highlights included the stunning tapas, the “Duck-Stuffed Pigeon” cooked in Pomelo and creative non-alcoholic pairings🧡

2019年に@theworlds50best の世界ランク1位とミシュラン3つ星を獲得した、南フランスのマントンにある「Mirazur（ミラズール）」🏆 オーナーシェフ「Mauro Colagreco（マウロ・コラグレコ）」が去年10月に東京の大手町に「CYCLE（スィークル）」をオープンしました🎉 ヘッドシェフを務めるのは @miya176336 🥄 サステナビリティに取り組みながら、お店のコンセプトである「循環型ガストロノミー」を表す「根、葉、花、果実」を軸としたコースを提供しています🌻

今回はマウロシェフが来日し、自ら料理を振る舞う、贅沢すぎる3日間限定の特別なイベントにお招きいただきました🥹 本家のマントンで毎年開催されるレモンフェスティバルにインスパイアされた、柑橘類をふんだんに使ったスペシャルメニューと世界観を体験しました🇫🇷 カバー写真の黄色い菊の花の上に並ぶのは貝のソース、柚子のクリームとキャビアをパイ生地に乗せた美しすぎるタパス👑 その他柑橘類の可能性を最大限に活かした、唯一無二なラインナップに感動しました💛
