Sacha - Madrid (Spain)
@sacha_restaurante resembles a classic bistro, with white tablecloths and a simple but very inviting dining room. The charismatic chef Sacha Hormaechea, who is a host like no other and circles around the tables to ensure everyone is having a good time, serves Spanish classics with his own authorial twists.
It is often said that this is the restaurant where all chefs like to go. And it is easy to understand why once you first bite into well-executed steak tartare.
Other hits included the crab “false lasagna” and their world famous tortilla vaga. The first one resembled a creamy spider crab ravioli, while the latter was nothing more than an egg and potato tortilla with morcilla sausage and piparra peppers. Simplicity at its finest, with the egg yolk still runny.
The final dish of the day, served tableside by Sacha himself, was a platter of bite-sized pieces of pig`s ear. It was crunchy, gelatinous and with a strong caramelized flavour on the edges.
