Checked out @katsuboeats for the first time with @bobby.mosss as wingman, and glad we did. Soy-rich Tokyo Shoyu ramen with chicken chashu is a fine cold-weather bowl, but I think I like the silky pork & chicken broth in the Tori Paitan even better — and it gets richer and more flavorful as you get down to the bottom of the bowl and all the elements merge. Gyoza with a fragrant ponzu sauce at the Katsubo Fashioned kicked things off quite nicely, too.
