Next up on the ATX BBQ Tour: another (relative) newcomer, @parishbarbecue. I love that they're switching it up with some less conventional items, like smoked beef chuck and a rotating boudin of the week.
That tender chuck has a big beefy bite, and you can fold a chunk into a shard of white bread with a pinch of pickle and onion and a squirt of sauce to make a fine little sandwich. The boudin variety this week was ham and cheese - didn't get a whole lot of ham flavor, but a nice snap to the casing and a very satisfying savory rice blend beneath it.
The veg is good, too - zippy Remoulade vinegar slaw and cool, herb-laced creole tomato salad. And, they had the good sense to install a brewery (@austinbeerworks) with powerful AC right next door.
