Dinner at @aulisphuket Aulis Phuket, located in the stunning @iniala_thailand Iniala Beach House resort which, with just 7 incredibly luxurious suites, was a little over my budget but fear not, if you do decide to visit and need somewhere to stay then the Natai Beach Resort is a one minute walk away and you can get a beach front villa at a more sensible price (they were filming White Lotus in this resort while I was chomping my way through Charlie’s delicious 15 course tasting menu). No I’ve never watched it either 🤷🏻‍♂️.
As one would expect from a @rogan_simon Simon Rogan restaurant led by Ynyshir alumni @_charliewilson_cook Charlie Wilson, it was fantastic. The menu at Aulis Phuket is dedicated to showcasing native ingredients, working hand in hand with local farmers and growers from across Thailand and Asia and including significant contributions from their own garden just in front of the restaurant. Charlie and his team are all confident, knowledgeable and extremely entertaining hosts and I had a great time. The food of course was delicious and while having Simon Rogan’s Aulis DNA coursing through the menu Charlie and the team are certainly getting some of their own identity and ideas across in many of the dishes. This meal was a highlight of my Thai trip so far. Highly recommended.
