This is exactly what happened here: a very talented fine dining chef from the center of the capital moved his kitchen to an agriturismo on the countryside in Lazio. Using 0 km ingredients from the organic farm, he is creating an ever changing menu of very delicious and creative dishes, absolutely true to the spirit of the old stone farmhouse.

Check out that chicken neck ‘Scotch egg’! An ingredient normally thrown away turned into something utmost delicious and unique. Or the lamb brain in the fried zucchini flower. The kimchi grapes(!) on the calamitata pasta. The simple but perfect black pork chop with burnt carrot and nduja fat. Goat milk ice cream with tonka beans, honey comb and lavender oil.
And you can enjoy this even alfresco, under a nice tree!
