手打ワンタンメン / Teuchi Wontonmen / Suehiroken — Toyama, Toyama

The soup is made in an iron pot using domestic chicken bones and dried sardines sourced from Sakaiminato, Tottori Prefecture. Noodles and wontons are handmade every morning by the owner and his son. Pork chashu, menma, negi. Gyoza and Shumai side menu.

First opened as a food stall over 90 years ago by a husband and wife, at the time when no word for ramen existed. 80% of customers order Wontonmen. The first permanent location of this store was established in 1936 on a street that was lined with willow trees, so they called it ‘Yanagi no Shita.’ Some of the existing regular customers have been coming for four generations, now great-grandchildren. Operated by the third and fourth generation Yamaguchi-san, the owners say they hope to continue protecting the flavors without being swayed by the times. 71 seats. Founded in 1931.
