中華そば / Chūka Soba / New Tomochin Ramen — Shimbashi, Tokyo
Light and clear chan-kei style shoyu soup is made from mostly pork femur bones, finished with a layer of oil. Medium-thick flat straight high-hydration noodles are supplied by Shinjuku Daruma Seimen. Topped with generous amounts of sliced pork chashu, bamboo shoots, negi and wakame seaweed.
This is one of a number of stores in Tokyo serving ‘chan-kei’ ramen, a style that has risen in popularity over the past several years. Often times this style is served in rebranded ramen shops that were previously operated as branches of Ramen Nagi. While there are many brands that now serve chan-kei, other Tomochin stores include the original in Koenji and additional outposts in Kawasaki and Jimbocho. This branch is located in the basement of the Shimbashi Ekimae Building No. 1. Six seats (standing only). Open from 8am most days. Since September 29th, 2023.
