特製辛つけ麺 / Spicy Tokusei Tsukemen / 遷 (Sen) — Ikebukuro, Tokyo

Tonkotsu-gyokai soup is a dense blend of chicken and pork, fortified with niboshi and dried fish powder. The spicy option adds on chili oil and chili powder. Thick, straight noodles are made with Haruyokoi wheat from Hokkaido. Toppings for the ‘tokusei’ include low-temperature pork and chicken chashu, ajitama, two types of menma and negi.

Sen is run under the direction of Menya Nakagawa, another ramen brand based in Ikebukuro. The space was formerly occupied by the ramen shop Taizo, which operated for 21 years.
