Jiro inspired ramen consists of emulsified tonkotsu-shoyu soup and pork back fat. Thick-cut noodles are ordered via Maruyama Seimen. Topped with two thick slices of pork chashu, bean sprouts, cabbage, diced onions, ginger and garlic. Unlike most Jiro shops, 'call' toppings are ordered at the time of submitting your meal ticket. Three ramen flavors are available to choose from (shoyu, shio or miso). Some customers consider this shop inspired by Iekei, since there are a number of free condiments on the counter and white rice is also on the menu.
Opened by a master who trained at the Ramen 'Foods' Shimbashi branch, this store was originally founded as a sister store of the chain Ramen Dai. In 2003, the shop underwent renovations and was renamed Ramen Saburo. In March of 2012, the manager changed and the recipes were updated to the current menu. 11 seats. Open since August 2000.
