Tokyo cha-cha style ramen contains a shoyu soup made from pork and niboshi, finished with a shower of pork back fat. Thin straight noodles are special ordered. Topped with diced kombu, pork chashu, menma, negi and nori. Curry rice on the side.
The master trained at Kazuki in Ebisu (now closed), a legendary late night Tokyo ramen shop which was known for Tokyo cha-cha style pork back fat ramen. 16 seats. Open since 1986.
